Cinnamon

Ceylon cinnamon (Cinnamomum verum) commands a significant price premium over Cassia (Cinnamomum aromaticum) and is specifically protected under Sri Lanka's GI (Geographical Indication) certification. Two critical quality parameters drive export compliance: moisture content (maximum 14% for EU/US markets) and cinnamaldehyde concentration (the primary bioactive marker distinguishing Ceylon from Cassia and determining flavour intensity). Both are currently measured by slow laboratory methods.

Findings

What We've Established

NIR Feasibility - Cinnamaldehyde

Cinnamaldehyde's conjugated aldehyde structure produces characteristic NIR absorption features in the C=O and C–H stretch combination regions. Published NIR studies on cinnamon authentication using these features demonstrate classification accuracy above 95% for Ceylon vs. Cassia discrimination - a commercially critical capability for the Sri Lankan export sector.

Authentication Opportunity

The Sri Lanka Export Development Board has documented repeated cases of Ceylon cinnamon being adulterated or substituted with Cassia in international markets. A rapid NIR-based authentication tool addresses a verified market need with direct GI certification relevance.

Methodology

Technical Approach

Proposed dual-parameter model targeting moisture and cinnamaldehyde simultaneously from a single NIR scan. Reference methods: ISO 6468 for moisture, steam distillation + GC analysis for cinnamaldehyde. Requires authenticated Ceylon and Cassia samples across multiple grades (International Grade 0–4) to build both a quantification model and a classification boundary for adulteration detection.

Where We Stand

Awaiting Response

Initial outreach to industry partners and the Ceylon Cinnamon Exporters Association was completed. Response is pending. No dataset work has commenced.

Roadmap

Next Steps

1

Confirm partner engagement and establish sample collection protocol

2

Source authenticated reference samples from certified GI cinnamon producers

3

Build authentication dataset spanning both Ceylon and Cassia at multiple grades
